Title: Salad Nicoise

Yield: 4 Servings

1/3lbGreen beans
1/3lbBaby potatoes
56 G. can rolled fillets of anchovies, drained and rinsed
1/3cBlack olives, halved
12 Cherry tomatoes, halved
6 Lettuce leaves
2cnChunky tuna, drained
  French Dressing:
1/4cOlive oil
1 1/2tbLemon juice
1tsWhite vinegar
1tsSeasoned pepper
1tsChopped fresh thyme leaves

Cut beans into 1 1/2 inch lengths. Boil, steam or microwave beans and potatoes separately, until just tender; drain.

Slice potatoes, combine in a bowl with beans, anchovies, olives,tomatoes, torn lettuce leaves and tuna.

Just before serving, toss lightly with dressing.

Dressing: Combine all ingredients in jar, shake well.
